For me this recipe look skeptical and not very appetizing…
But being the brave person I am I decided to go out of my comfort zone and give it a try….
For Superbowl yesterday.
No test batch first to see if it actually tastes good….
I dived right in and made a double batch (go big or go home right??!!)
Luckily this dip is DELISH!!!!
I made the ‘new’ variation that is posted on the website below
I used one regular ranch dressing mix and one fiesta ranch dressing mix
I also used low fat sour cream
For the mexicorn I found corn that had peppers and other things in it so I used that figuring it was about the same
Doubling it makes ALOT and in fact we will be eating it again tonight
1 packet Hidden Valley Ranch Original Salad Dressing and Seasoning Mix
16 oz sour cream
10 ounce can Rotel Original (drain excess liquid)
11 oz can of Mexicorn (drained)
3/4 cup shredded cheddar cheese
Mix all ingredients in a medium size bowl.
Chill in fridge for 1 hour.
Serve with your favorite tortilla chips.
