Renae’s Taco Bake

Something cheap, quick and really good!!

Note: I doubled the recipe and it filled a 9″ x 13″ pan perfectly.

Renae’s Taco Bake


1 lb. ground beef
15-oz. can tomato sauce
1-1/4 oz. pkg. taco seasoning mix
3 c. elbow macaroni, cooked
8-oz. container sour cream
1 c. shredded Cheddar cheese, divided
1/4 c. grated Parmesan cheese
Garnish: chopped green onions


Brown beef in a skillet over medium heat; drain. Stir in tomato sauce and seasoning mix. Bring to a boil and remove from heat. Combine cooked macaroni, sour cream and 1/2 cup Cheddar cheese in a bowl. Spoon macaroni mixture into a lightly greased 13”x9” baking pan. Top with beef mixture and remaining cheese. Bake, uncovered at 350 degrees for 30 minutes, or until hot and bubbly. Garnish with green onions. Serves 6.





My How Time Flies

Almost the end of July and it’s been over a month since I have posted here.

Time is passing me by and will pass me by faster and faster as the year ends.

Right now we are totally enjoying summer!!!!!
With the exception of yesterday when it POURED rain (Steve and I got soaked in Seattle!!!) and a few rain drops today this spring and summer has been great.
HOT weather is supposed to be back this weekend and by all appearances the rest of July and the whole of August should be smoking!!

Let’s see…
Things that happened this last month:

With the exception of a semi-dwindling pile of gravel (which I hope to finish spreading this weekend) ALL yard work is done!!! Now it’s just a matter of mowing the grass (takes Steve all of 4 minutes), watering a few flowerpots and keeping plants trimmed.
Time to completely enjoy the out of doors!

Got my very first set of french nails.
Love Love Love them and will never go back to my natural nails!
No more filing, chipping, breaking or painting not to mention they work GREAT fingerpicking guitar!
I just go in every 3 weeks for maintenance.

Broke down and purchased an ice cream/frozen yogurt maker.
So far I’ve made two recipes: Peanut Butter/Peanut Butter Cup ice cream and Strawberry Cheesecake frozen yogurt. Love them both!!!!! Wayyyyyy better than the commercial stuff!

I currently have a new/different guitar teacher as my original one takes the summer off.
Am excited to see the different teaching methods as everyone has their own style.
My new teacher has me working on Marshall Tuckers’ Can’t You See (love this song).
I am also teaching my self Simon and Garfunkel’s The Sound of Silence.
Love the fingerpicking!! (This is by far the BEST fingerpicking video I found of this song)

Stumbled across this Kickstarter project and quickly jumped on the band wagon.
I can’t wait to get this and it will come in very handy when we start going to car shows!

And last but not least….

How about that 50 Shades of Grey Move Trailer???!!!!

I read the books and will watch the movie. (I just might have to revist those books!!)
My own personal opinion: They miscast ‘Christian’. His looks just don’t fit the part.
Guessing the movie will be good however if you want DETAILS read the books!!

(that will leave you in a swoon!!)
