BBQ Chicken and Mango Quesadillas

Oh so GOOD!!!
And easy!

This is basically a no-brainer!


Add crumbled bacon…..always add bacon!!
I also squirt a little ranch dressing on

BBQ Chicken and Mango Quesadillas


6 small tortillas (6 inch)
2 cups cooked chicken, shredded
2 cups shredded cheddar cheese
1 mango, peeled and sliced
BBQ sauce
fresh cilantro
1 tbsp of butter


In a small pan melt a little bit of the butter over medium heat, and add a tortilla.
Top with a third of the cheese, a third of the chicken, mango slices, drizzle with BBQ sauce and add some cilantro.
Cook until bottom is golden brown, lay another tortilla on top and carefully flip over and cook until bottom tortilla is golden brown.
Repeat with remaining ingredients.





Homemade Cough Syrup

With a house full of people (8 of us) and half of them being kids we have had our fair share of the flu and colds this last month.

I think it has hit all of us.

This week it was our (me and Steve) turn to get a cold.

Dry, hacking, body wrenching, never-ending coughing that was 100 times worse when laying down.

I think the other night we were awake more than asleep……coughing…..hacking…..
(I took night time Nyquil and it didn’t even make a difference)

I was not going to go through another night like that!

So yesterday I searched  the internet (bonjour!) for homemade cough syrup and found one.

Guess what people….


I will always have ingredients on hand to make this.

I had three shot glasses just sipping it while watching TV.

The next time I make this I will reduce the peppermint candy to 10 pieces and add a bit more honey.

Jimmy’s Homemade Cough Syrup

In a pint jar drop 15 soft peppermint balls

Add 2 tablespoons lemon juice

Add 2 oz. honey

Leaving about 1/2″ head space, fill the jar with smooth Canadian whiskey

Let the peppermint dissolve and gently shake every so often to mix ingredients thoroughly

This is way better than any commercial cough syrup!
